We use P2P for all kinds of services, including legal services.  Here is a sample setup:

Commodity level agreement, where the Commodity Code is Legal Services

Hierarchal Agreement - Standalone

Relase required - No

Invoicing against - Yes

Receiving against - No

Whatever dollar amount is the max you want to apply to the contract.
